The Perfect Sip for French Buttercream Macarons

Jump to Recipe

Some pairings are practical. Others feel like they were made to be admired for a moment before the first bite. French buttercream macarons belong firmly in the second category β€” delicate shells, a silky filling, and that kind of elegance that turns an ordinary afternoon into something that feels just a little more intentional.

So the drink needs to rise to the occasion. Not louder. Not busier. Just thoughtful, a little glamorous, and soft enough to let the macarons keep their spotlight. That’s where this lavender vanilla iced latte comes in: floral without being fussy, creamy without being heavy, and distinctive enough to make the whole moment feel complete.

If you already have your French buttercream macaron recipe ready, this is the companion drink that belongs beside it.

Today’s Recipe:Lavendar Vanilla Iced Latte

Lavender Vanilla Iced Latte

This drink opens with a soft floral note, then settles into creamy vanilla and coffee warmth.

Ingredients

  • 1 shot espresso or 1/2 cup strongly brewed coffee
  • 3/4 cup milk of choice
  • 1 to 2 teaspoons lavender syrup
  • 1 teaspoon vanilla syrup
  • Ice
  • Optional: dried lavender for garnish or a light milk foam topping
  • For the lavender syrup:
  • 1/2 cup water
  • 1/2 cup sugar
  • 1 tablespoon dried culinary lavender

Method

  1. Make the lavender syrup
  2. In a small saucepan, combine the water, sugar, and dried lavender. Bring it to a gentle simmer and stir until the sugar dissolves. Let it simmer for about 3 to 4 minutes, then remove it from the heat and let it steep for 10 minutes.
  3. Strain out the lavender and let the syrup cool completely before using.
  4. Build the latte
  5. Fill a glass with ice. Add the lavender syrup and vanilla syrup first, then pour in the espresso or strongly brewed coffee. Top with milk and stir gently so the flavors blend without losing that layered look.
  6. If you want it to feel extra special, finish it with a tiny pinch of dried lavender or a soft crown of foam.

Notes

The lavender keeps it graceful, the vanilla makes it comforting, and the coffee gives it enough structure to stand beside the macarons without stealing attention.

Why this pairing works

French buttercream is rich, smooth, and luxurious, which means the best drink pairing should bring balance instead of more weight. A lavender vanilla latte gives you exactly that β€” the floral lift of lavender, the round sweetness of vanilla, and the grounding comfort of coffee so the pairing never feels too sugary.

Macarons are delicate by nature, and they do best with flavors that complement rather than compete. Floral, citrus, and light, balanced coffee notes are often ideal with French pastries because they highlight the dessert instead of overpowering it. This drink does that beautifully.

It’s the kind of pairing that feels polished without trying too hard. A little elegant. A little cozy. The kind of thing you’d serve on a quiet afternoon when you want everything around you to feel softer.

Ingredients

Buttercream Filling
  • 2 cups confectioners' sugar
  • 6 oz Raspberries
  • 1 tsp vanilla extract
  • 1/2 tsp coconut extract (optional)
  • 2 tbsp coconut milk
  • 2 sticks salted butter, softened
  • 1 vanilla bean, seeds scraped out
Macarons
  • 1 3/4 cups confectioners' sugar
  • 1 1/4 cups almond flour
  • 1/4 cup coconut flour
  • 2/3 cup egg whites
  • 3 tbsp granulated sugar
  • 1-3 drops red or pink food coloring (optional)

Method

For the Macarons
  1. Preheat the oven to 300 degrees F using the convection setting. Line 3 baking sheets with silicone mats. Measure the confectioners’ sugar and almond flour by spooning them into measuring cups and leveling with a knife. Transfer to a bowl; whisk to combine.
  2. Sift the sugar-almond flour mixture, a little at a time, through a fine-mesh sieve into a large bowl, pressing with a rubber spatula to pass through as much as possible. It will take a while, and up to 2 tablespoons of coarse almond flour may be left; just toss it
  3. Beat the egg whites, cream of tartar and salt with a mixer on medium speed until frothy. Increase the speed to medium high; gradually add the superfine sugar and beat until stiff and shiny, about 5 more minutes.
  4. Bake the first batch until the cookies are shiny and rise 1/8 inch to form a u0022foot,u0022 about 20 minutes. Transfer to a rack to cool completely. Repeat, using a double sheet for each batch. Peel the cookies off the mats and sandwich with a thin layer of filling (see below).
For the Filling
  1. Tint the batter with 2 drops neon pink gel food coloring; flavor with almond extract. Fill with seedless raspberry jam (you’ll need about 3/4 cup).
  2. Use a clean piping bag to pipe the filling on top of the bottom cookie. Now place another cookie on top. Repeat with the remaining cookies and filling.

Serving ideas

If you want the full experience, serve the macarons and latte together on a small tray with:

  • a linen napkin,
  • a dessert plate,
  • a clear glass or pretty mug,
  • and maybe a book, playlist, or quiet show in the background.

That’s the thing about a good pairing β€” it doesn’t just taste right. It changes the mood of the room.
